Sunday organic market in the new Centris Walk on a cool, breezy, easy morning, the culinary feast had just opened, the food, hot and steamy — the aroma of béchamel sauce with mushrooms and butter, of sea bass fish cooked/ marinated in vinegar (kilawin), ginger, raw onions, chilli; strong, brewed coffee from newly ground Batangas coffee beans; stuffed tomatoes, fresh, grilled tuna; coconut milk on a vegetable dish; wafts the air, you could walk through with your eyes closed and know all the ingredients carefully blended in the pots, pans, and trays, and for two minutes you could picture this must be what heaven smells like—until the crowd of shoppers start rushing in. The land of plenty — being in a market like this makes you feel there’ll never be a food shortage in the country; of course, many more live in abject poverty and you wish everybody could have a taste of this. But right now, there’s a whiff of oysters being cooked in butter and lots of finely ground garlic….. (oh, with apologies to the purely vegetarian, as you know, i’m not fully vegan, i still eat seafood, no squirming, just sweet savoring, the fragrance of food can make one feel alive.
